Kitchen Success Through Apprenticeship

Kitchen SuccessThough hardly a household name, Clare Smyth – protégé of Gordon Ramsay and Head Chef of his eponymous Chelsea restaurant – has risen quietly in the last few years to become one of the most successful chefs in the country. Born in County Antrim, Northern Ireland, Smyth moved to England at the age of 16 in order to pursue her passion for cooking. After studying for an NVQ in catering at Highbury College in Portsmouth, she apprenticed in various restaurants across the capital, including Heston Blumenthal’s the Fat Duck, before joining Gordon Ramsey in 2002. Smyth then worked her way up to Head Chef at the age of just 29, and is now the first and only woman to run a three Michelin star restaurant. "I became obsessed with food in the same way as other kids were obsessed with pop bands, and read every book I could find about food", she said, "when I did my first apprenticeship at the age of 16, the chef told me he had never met someone with so much knowledge."
